Preparation:  In a saucepan, bring milk just to boiling point; add rice and salt and mix well. Remove from heat, cover and let stand 5 minutes, stirring occasionally with a fork. Meanwhile, sprinkle gelatin over cold water. Mix egg with sweetener. Add a little of the rice mixture to the egg mixture; mix well and return all the mixture to the saucepan. Add gelatin, orange extract, rind and juice. Refrigerate until mixture begins to thicken. Fold in dietetic topping and pour into dessert glosses. Refrigerate until thick.
