Sugar Free Nutty Spice Cookies



Nutty Spice Cookies


2 cups cake flour

2   teaspoons ground allspice

1/2 cup softened unsalted butter 1/2 cup softened margarine or butter

3  1/2 tablespoons granulated fructose

3 tablespoons sugar substitute or 3 tablespoons granulated fructose 1/2 cup egg substitute or 2 eggs

1 tablespoon thinly sliced and snipped or grated orange zest (optional) 1/2 cup chopped nuts (unsalted walnuts, almonds, Brazil nuts, hazelnuts, or peanuts)


Preheat oven to 375°. Lightly oil a baking sheet or use a nonstick one.

In a medium bowl, sift together flour and allspice. Set aside.

In a large bowl, cream butter, margarine, fructose, and sugar substitute (or 6 1/2 tablespoons fructose and no sugar substitute.) Add egg substitute and orange zest. Mix well with electric mixer. On low speed, add flour mix­ture gradually, mixing well and scraping bowl. Stir in nuts.

With a teaspoon, drop cookies onto the baking sheet 2 inches apart. Dip fork tines in water and flatten to make thin cookies.

Bake 15 to 20 minutes until cookies are lightly browned around edges. Check often and do not overbake. When baked, remove cookies and cool completely on a wire rack. Store them in an airtight tin.

Makes 40 cookies
