Sugar Free Rice Pudding

Preparation:  Start heating oven to 350°F. Bring water to a boil; remove

from heat and add rice. Stir, cover and let stand for 5 minutes. Blend eggs with sweetener, vanilla and salt; gradually stir in hot milk. Add rice. Pour in an ungreased Casserole (1 quart), and sprinkle over with nutmeg. Put in a dish filled with hot water (1V2″ high). Bake 70 minutes or until done. Remove casserole from hot water. Serve hot or cold.
